Brownie batter pancakes!


I
don't post a lot of chocolate recipes because, well.... I don't really like chocolate!!! 
(GASP!!!!! i know, right?)  Now, don't get me wrong, I'm not trying to be all, Nobel like, "oh.. look at me, I only like healthy food!!!!!, all you chocolate lovers are horrible!"    NO NO, I'm more of a cheese addict!  WAYYYYY WORSE! :)  

ANYWHOO.....  This recipe is actually good, healthy, chocolaty, and you can have it for breakfast, or dessert!


brownie batter pancakes


Ingredients
For the pancakes
1 banana, peeled
4 egg whites
2 tablespoons Coconut Flour, (you can leave this out if you don't have it, your pancakes just wont be quite as thick)
2 tablespoons unsweetened cocoa powder
1 tablespoon stevia
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
pinch of salt
For the toppings
Use whatever you like, I love strawberries!

or make your own chocolate syrup with
1/4 cup coconut milk
1 tablespoon unsweetened cocoa powder
1 tbs stevia
(just mix it together and drizzle it on top)

Method
1. In a food processor or blender add your banana and pulse until completely broken down into a soupy paste. Add all the rest of the ingredients for the pancakes and blend well.
2. Heat up a large skillet under medium heat, grease with a bit of coconut oil or non fat cooking spray, and add your pancake batter to the hot skillet with a spoon. Make to your preference size. I make 2 HUGE pancakes with the batter. Flip pancakes when you begin to see bubbles forming on the top surface of the pancakes. The smaller they are, the shorter amount of time they will take to cook so keep on eye on them.
3. While your pancakes cook, mix your chocolate sauce, or dice your strawberries. 

Once your pancakes are done cooking, stack and add toppings!

1 SERVING IS THIS ENTIRE RECIPE SO EAT UP!
