What I'm bringing to easter... SO I CAN EAT TOO!!!

Whenever I attend any kind of party, I always bring something to share to eat!  That way, I know there will be at least 1 thing at the event that is clean and healthy!  The funny thing is, everyone usually ends up eating ALL of whatever I bring... LOVING IT.... and not even realizing it's good for them!!!!

Here's what I'm bringing to share at the Easter party

1. Grilled asparagus!!!!    People can just pick it up with their hands and eat it!

Just lay your asparagus out on a baking pan, drizzle olive oil and garlic salt over it and throw it under the broiler until the tips just start to brown!  It only takes about ten min!!!

2.  AND THIS YEAR I'M BRINGING CARROT CAKE BITES!!!! YUM!



Ingredients
3/4 cup almonds
5-6 dates, pitted
1/3 cup unsweetened shredded coconut
2 Carrots, shredded
1/2 Tbsp Cinnamon
1/4 tsp Cloves
2-4 Tbsp coconut milk
3 TBS stevia if you want, I think they're sweet enough with just the dates!

Instructions
Put almonds in Vitamix or food processor. Blend until a fine flour. Remove.
Put dates and coconut in Vitamix and blend until a smooth paste in formed.
Return nuts, add carrots and spices, and mix well.
Add coconut milk and blend until desired consistency is reached.  It should be a really thick dough, like play-dough
Form into balls.
roll the balls in some coconut if you like.
Store in refrigerator.

*** If you're really fancy, stick toothpicks in the top of each one. :) 

**** For those of you on an em meal plan, 3 Carrot cake bites = 1 meal.   EAT AS MUCH ASPARAGUS AS YOU WANT!!!!

A FEW HELPFUL HEALTH AND COOKING TIPS:

Store your grains and seeds whole and then grind them as you use them.  Buy a "Cadillac" food processor if you want to, but we get by using a coffee grinder we bought at Wal-mart for around $15.00.  Our little coffee grinder works great to grind our flax seed, wheat, and other grains in small quantities as we use them.  This way we can store them whole so they won't spoil.

The moment food is processed it begins to decompose, regardless of how it's stored.  It is true that many whole grains will store indefinitely if they are whole, unprocessed, and stored in cool, dry and dark conditions.  But it's also true that once cracked, rolled, or processed in any way, they begin to break down and spoil or lose nutritional value.  We do not recommend that you feed your family food that has been packaged to have a 25-year shelf life.

Seeds are the healthiest food we can eat.  Most nutritional experts recommend your healthy diet consist of 45 to 65 percent seeds, which include grains, beans and other legumes and nuts.  Most of the rest of our diet should consist of whole vegetables and fruits, fresh or cooked.  For good health, we should limit our consumption of meat and dairy foods to no more than about 10% of our daily calories.

Instead of unhealthy processed snacks, why not snack on almonds, sunflower seeds, grapes, carrots, apples and other fruits, fresh and dried?

The way to eliminate our risk of cancer, heart disease, arthritis, obesity, diabetes, and most other degenerative diseases is no mystery.  Eating 2000 to 2500 calories per day of mostly seeds and fresh fruits and vegetables as described above has proven to do that.

The Standard American Diet (S.A.D.) consists of huge amounts of addictive sugar, fat, oils, and processed foods filled with preservatives, artificial coloring, and devoid of nutrition is at the heart of the majority of our health problems.  Eating the Standard American Diet will give your body huge amounts of calories and chemicals and very little nutrition.  Eat, store and cook with simple, unprocessed foods and feel great, lose weight, and eliminate your family's risk of most degenerative diseases. 

What if we improve our healthy eating by 25%?  50%?  90%?

BBQ STUFFED BANANAS


These barbecued stuffed bananas are so delicious and very easy to make. The secret is to use VERY ripe bananas (they are sweeter but also their flavor works better once cooked).

Ingredients:
2 large or 3 medium very ripe bananas
¼ cup chopped raw pecans OR walnuts
¼ cup chopped raw Almonds
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ginger
¼ tsp allspice
1/8 tsp cloves
1/8 tsp cardamom
Dash salt


1. Chop nuts fairly finely (it’s okay if they aren’t completely evenly chopped). Combine chopped nuts with spices and mix to evenly coat.
2. Slice bananas lengthwise about three quarters of the way through the banana (careful not to cut the peel underneath). Spread the banana open and fill the groove with the nut and spice mixture.  Then drizzle a little olive oil in each one.
3. Barbecue on a medium to moderately hot grill for 14-18 minutes (time will vary based on the size of your bananas and how hot your grill is). The peel will darken (and maybe turn completely black) which is normal. You know they’re done when the peels are dark, the banana is bubbling away and they smell fantastic!
4. If it's to cold to grill, place stuffed bananas on a cookie sheet (line with parchment paper, tin foil or a silicone liner to make clean-up easier) and bake at 425F in the middle of the oven for 12-14 minutes.
5. Remove from the grill (or oven) and enjoy warm! Eat with a spoon scooping right out of the peel!

NEW DAYCARE OPTION!!! YAY!!!


Those of you who need child care during class 
I now have a great option for you!

Gayetta Hink

She has an in-home daycare right downtown Kittitas and is willing to open it up to those of you who need to drop your kids off during class!

She doesn't open in the mornings until 6am,  so obviously she won't be available for the am classes, (but no one should be waking there kids up at 4:30 am anyway!!!! LOL!)

She would be available for all my daytime classes, (the 8:30 am ones)  and possibly the evening zumba classes as well.  (right now she closes at 6pm but may be willing to stay open until 7pm if enough mom's need her to)

She would also be available if you needed her during your personal training sessions!

So everyone who's been using KIDS as an excuse to not get in shape or make it to class... NO MORE EXCUSES!!!! Give Gayetta a call!

Simple Chia seed jam AND MY NEW COOKING YOUTUBE CHANNEL!






I'm EXCITED to announce that I've not got my own COOKING CHANNEL ON YOUTUBE!  

If you don't want to do all that BORING reading of recipes.... now you can JUST WATCH! :)


Easy Chia Seed Jam

Eat this straight from the container as a snack, or spread it on my banana pancake recipe, (that's my favorite way to eat it!!!!) mix it into oats or yogurt, or just make a good ol’ peanut butter and jelly sandwich – the possibilities are endless!

2 cups fruit of your choice (frozen or fresh) - I used peaches

1/4 to 1/3 cup chia seeds or flax seeds - you can grind them in your coffee grinder, or just use them whole!

stevia, to taste (or other sweetener) - OR NONE AT ALL!!!!

1. If using frozen strawberries, let them thaw.
2. Mash FRUIT with a fork or blend them. I mashed one batch and used my immersion blender for another – both methods worked great, but the blended version was more like jelly and less like jam.
3. Mix in chia seeds, and stevia, if using.
4. Cover the mixture and place in the fridge to set up for a while, 30-60 minutes is ideal.

That’s it! It’s super simple and so much better for you than the sugar-filled, processed jam you’d buy at the store.

Brownie batter pancakes!


I
don't post a lot of chocolate recipes because, well.... I don't really like chocolate!!! 
(GASP!!!!! i know, right?)  Now, don't get me wrong, I'm not trying to be all, Nobel like, "oh.. look at me, I only like healthy food!!!!!, all you chocolate lovers are horrible!"    NO NO, I'm more of a cheese addict!  WAYYYYY WORSE! :)  

ANYWHOO.....  This recipe is actually good, healthy, chocolaty, and you can have it for breakfast, or dessert!


brownie batter pancakes


Ingredients
For the pancakes
1 banana, peeled
4 egg whites
2 tablespoons Coconut Flour, (you can leave this out if you don't have it, your pancakes just wont be quite as thick)
2 tablespoons unsweetened cocoa powder
1 tablespoon stevia
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
pinch of salt
For the toppings
Use whatever you like, I love strawberries!

or make your own chocolate syrup with
1/4 cup coconut milk
1 tablespoon unsweetened cocoa powder
1 tbs stevia
(just mix it together and drizzle it on top)

Method
1. In a food processor or blender add your banana and pulse until completely broken down into a soupy paste. Add all the rest of the ingredients for the pancakes and blend well.
2. Heat up a large skillet under medium heat, grease with a bit of coconut oil or non fat cooking spray, and add your pancake batter to the hot skillet with a spoon. Make to your preference size. I make 2 HUGE pancakes with the batter. Flip pancakes when you begin to see bubbles forming on the top surface of the pancakes. The smaller they are, the shorter amount of time they will take to cook so keep on eye on them.
3. While your pancakes cook, mix your chocolate sauce, or dice your strawberries. 

Once your pancakes are done cooking, stack and add toppings!
