Nicole's 30 day EXTREME weight Loss Challenge RESULTS, 10 LB'S & 12.5in!!!


Nicole is a ROCKSTAR!!!! She recognized she needed to make a change and then,  GUESS WHAT?!?!?  She didn't just TALK ABOUT IT... SHE DID IT!!!!  PLUS, ALL YOU MOM'S OUT THERE GET EXTRA GOLD STARTS!!!!  It is so tough to EVEN THINK with no sleep, LET ALONE MOVE!!!!  Way to be an EXAMPLE of NO EXCUSES NICOLE!!!!!


I started this challenge because I was in a bad place with my physical self. I used to love working out and eating well, and I did so through my entire pregnancy with my third kid. Then he came, and my life got put on pause. After 14 months of little to no sleep, my sweet boy finally decided to sleep, and that's when I started to come out of my fog. I slowly realized that over the last year I had treated my body very poorly, by eating whatever was convenient and sitting on the couch. I needed a change. I tried a few times to get back in to a healthy routine but just couldn't do it on my own. I saw an advertisement for Erin's challenge, and decided to jump in. I am so glad I did. Her food was delicious, and her workouts were challenging. 

During the challenge lost 10 pounds and 12.5 inches! She was always available to answer any questions or concerns I had. This picture was on the last day of the challenge. We were camping, and since I had already had all of my food prepped I didn't have to stress about what I was going to eat or how I was going to stay healthy while we were camping!!

Tiffany's 30 day extreme weight loss challenge RESULTS!!!

Tiffany is one of those people who says she's going to do something and does it 100%  She was one of my clients who NEVER slipped up on her healthy eating and got ALL HER WORKOUTS IN EACH WEEK!!! I LOVE training people like Tiffany!!!!  


In the last 30 days I have learned so much and look at food completely different. To actually have my body react to the nutrition I put in it is a very empowering feeling. I realize I do have the tools to transform my body by learning to properly take care of it. I cringe at the thought of how I treated myself for so long. I no longer will ever mistreat my body in such a way. I have retrained my brain into looking at food as fuel and not as anything else. I also learned that eating clean has not only became an interest of mine, I have really enjoyed learning new techniques, different spices, new foods and prepping. This has forever changed the way I eat and I am so excited to continue my healthy way of life because with the right attitude it can be really fun and exciting. Erins recipes are not only totally do-able they are also very good. Losing weight knowing that this isn't some fad diet and it will actually be much easier to maintain due to the fact you change the way you think about food and what you can do with it verse a diet that all you think about is what you can't do...That being said in the last 30 days I lost a total of 14lbs and 16.5 inches . Thanks Erin for the great experience and the knowledge to be the best me I can be!!!

Lisa's 30-day EXTREME weight loss Challenge RESULTS!!!! YESSSS!!!


It has been so rewarding for me to follow Lisa's Progress!!! She has gutted out all my punishing workouts without one single wine!!!! I watched her totally transform her attitude about how she eats and come to really understand herself and her body!!! She sent me a previous email that pretty much SUMS UP what I hope for all my clients!!!..... "I can honestly say I will never weigh that (my starting weight) again...NEVER!!!!!! what I am proud of is my will power, strength, being in tune with my body and my feelings like; why I feel like I need to eat, what I feel like I need to eat, fitting into shirts that I can now wear, pants that feel baggy, clothes that I try on each week to measure my success..they will fit soon!!!!! and, that I have made healthy choices and will continue to do so, and that my family is so supportive. I am so grateful for your help and support, providing menus and tips and workouts. This has been a life changing experience for me because I have tried to do this numerous times and failed. Having a plan to follow has been so easy, and the food has been amazing"

Over the past 5 weeks I have been working with Erin I have lost weight and inches, but most importantly I have learned how to eat better, make time for myself with exercising and being in tune with my feelings and what I eat, cooking healthier for me and my family and my husband and I have spent quality time in the kitchen doing meal prep. Erin provided me with support, meal plans and recipes for amazing food, and workouts that kicked my butt and pushed me! I don't look at this as an end to my time working with Erin, but continuing my journey with the knowledge and tools that I need to succeed. I feel empowered and ready to continue eating clean, exercising and making me the best I can be!

Buffalo Chicken Stuffed Zucchini



Serves 2

INGREDIENTS
2 zucchinis
3 cups seasoned and cooked chicken, shredded
The ranch mix below
¼ cup red onion, diced
1 rib of celery, diced
2/3 cup shredded cheddar cheese, divided
3 tablespoons buffalo sauce (or more, to your taste) - I used Franks Red Hot Sauce

DIRECTIONS
Preheat your oven to 350 degrees F. Line a baking sheet with aluminum foil and spray with cooking oil. Set aside.
Cut each zucchini in half horizontally. Then with a melon baller (or spoon) carefully scoop out the center of the zucchini. Reserve ½ cup of the center and dice it up for your filling.
In a bowl, mix together cooked chicken, Ranch seasoning, celery & buffalo sauce.
Place zucchini, hollow side up, on the prepared baking sheet. Fill the boats with your buffalo chicken filling. The filling should be heaping. Sprinkle with cheddar cheese. (I left 2 WITHOUT cheese for me to eat)
Bake for about 30 minutes or until the zucchini have achieved desired softness.
*** I also drizzled a TINEY bit of ranch dressing over my families, but not mine. :)


Home Made Ranch Dressing mix: (You can use this for all sorts of recipes so keep it)
2 Tbsp. dried parsley 
1 1/2 tsp. dried dill weed 
2 tsp. garlic powder 
2 tsp. onion powder 
2 tsp. dried onion flakes 
1 tsp. ground black pepper 
1 tsp. dried chives 
1 tsp. salt Whisk together

Lacey's 30 day Extreme Weight Loss Challenge RESULTS!!!!


It was sooo fun to train Lacey!!! She was so excited and positive about the entire process, (WHICH I LOVE!)  OBVIOUSLY, She was excited to drop those pregnancy pounds, (aren't we all!) but Lacey also really focused on how this new lifestyle made her feel!  She had the PERFECT attitude.  A women after my own HEART!!!  PLUS.... COULD SHE HAVE A MORE BEAUTIFUL BABY?!?!  UM.... NO!  XOXO


I’ll be honest, once I signed up for Erin’s 30 day challenge, I was terrified. Excited, but terrified. I had just had my 3rdbaby, hadn’t worked out in six months and was eating whatever was convenient. I was ready to pack up the maternity clothes and start the process of getting my pre-baby body back. PLUS, I knew I needed to lose some of that baby weight to fit into a bridesmaid dress in two months!

I loved that I could do Erin’s program completely from home. We’ve never actually met in person but her plan is SO easy to follow and she was amazing at keeping me motivated throughout the process. Having a specific meal plan to follow made meal time so easy and took all the guess work out of it for me. Prepping it ahead of time so it was there to grab when I was hungry was a total game changer for me. Typically that’s when I’d flounder and throw in some fried freezer food and call it good so having it right there helped me make good choices.

I was scared of fitting in exercise 6 days a week and at first, I would wait and fret all day about the ‘perfect’ time to fit it in. But, guess what? That perfect time never happened so I had to MAKE time. After 4 weeks, exercising is totally routine. The workouts are still challenging but I can tell a huge difference in my strength and stamina.

My results: In 4 weeks I lost 13.7 pounds (yes! The .7 counts!) I lost 3.75” from my waist, 2.75” from my hips, 2.5” from my thighs and 4.5” from my stomach. And, best of all…no more maternity clothes!!

Amanda's EM Health & Fitness 30 day EXTREME weight loss challenge results!!!!


AMANDA LOST 25LBS in JUST 30 DAYS!!!!! 

Amanda is one that I can say went WAYYYY above and beyond with her fitness during this 30 day challenge!  She not only followed my nutrition plan TO THE T, but she also added lots of extra activity to her life on-top of the workouts I send daily!!!!  She walked and ran with friends and hiked the ridge regularly (a 2 mile up intense hike here in E-BURGE)!!!!  She is still going strong and can't wait to report her continued successes to ALL OF YOU!!!

After no longer being able to see results on my own I decided I needed a major change up from what I was doing. The second I heard about Erin's 30 day challenge I knew that was exactly what I needed to do !! 

I'm a busy stay at home mom to 4 children under 10 and Erin's 30 day challenge was super easy to follow and incorporate into some of my family's meals, which made it a lot easier for me ! I prepped half sat and the other half Sunday or Monday morning (if I really didn't have time over the weekend.) 

The food is awesome and super easy to make. The prepping makes everything so easy and readily available I had no excuse why I couldn't eat what I had pre preped and made. 

So far I have lost 25lbs !!! And almost 10 inches !! I couldn't be happier with the results I got, and would highly recommend it to anyone even thinking of trying it !!

Grilled Chiles Rellenos with Peach Mojito Shrimp





Ingredients

12 ounce medium fresh or frozen shrimp in shells, peeled and deveined
Nonstick cooking spray

8 fresh poblano chile peppers* (If you don't want them spicy, just use regular green peppers)

2 ears fresh sweet corn, husks and silks removed

2 large tomatoes, cored and chopped (2 1/2 cups)

5 tablespoons olive oil

1/4 cup snipped fresh cilantro

2 tablespoons lime juice

1/2 teaspoon salt

1 sliced peach and blended into a puree in your blender

3 cloves garlic, minced

1/8 teaspoon ground black pepper

1/2 cup chopped white or red onion

1 medium jalapeno chile pepper, seeded and finely chopped*

8 ounces queso asadero, shredded (2 cups) (or any white cheese that you like)

1 ounce queso Cotija, shredded (1/4 cup) (or any crumbly white cheese you like, I used Feta)


Directions

Thaw shrimp, if frozen. For a charcoal or gas grill, coat the grill rack with cooking spray. Coat poblano chile peppers and corn with cooking spray. Place whole chiles and corn on grill rack. Grill, covered, over medium heat about 10 minutes or until chiles are charred and blistered, and corn kernels are lightly browned, turning corn and chiles occasionally. Remove chiles and corn from grill. Transfer chiles to a clean paper bag; close bag. Let chiles and corn cool.

Once corn is cool, use a sharp knife to cut kernels from cobs. Transfer kernels to a large bowl; add chopped tomatoes, 2 tablespoons of the olive oil, 2 tablespoons of the cilantro, the lime juice, and 1/4 teaspoon of the salt. Mix well and set aside.

In a medium bowl toss shrimp with peach puree, 1 tablespoon of the olive oil, 1 clove garlic, the remaining 1/4 teaspoon salt, and the black pepper. Set aside.

In a large skillet heat remaining 1 tablespoon olive oil over medium-high heat. Add onion, remaining 2 cloves garlic and the jalapeno chile pepper; cook and stir about 4 minutes or until tender. Transfer mixture to a medium bowl; let cool. Add queso asadero, Cotija, and remaining cilantro to the onion mixture, stirring to combine. Divide cheese mixture into eight equal portions; shape each into a 2 1/2- to 3-inch log; set aside.

Cut stems from peppers. Cut a slit down one side of each pepper. Open each pepper flat and use a paring knife to scrape seeds from the inside and the skins from the outside. Place a cheese log on each pepper and roll pepper around the cheese to completely enclose.  Place stuffed poblanos and shrimp with marinade, either back on your grill, or put the peppers in the oven on 400 until the cheese is melted and cook the shrimp with marinade on a skillet until pink.  

Serve over grilled corn and chopped tomatoes.  I also grilled a bunch of other veggies to go with it!

*Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.

A NOTE FROM ERIN: I consider dairy products, (If they don't bother your stomach) a healthy fat.  I have discovered that dairy makes me feel bloated and uncomfortable, but my family is fine with it.  You can make that choice for yourself.  When I ate this meal, I did not have a Chilli filled with cheese, I simply ate a roasted one. :)  But my husband and sons enjoyed the cheese!!! xoxo
