Jamie C's BEFORE & AFTER my 30 day extreme weight loss challenge!

I lost a total of 6 pounds and over 4 inches. I feel stronger and healthier. I was also able to run over 3 miles, actually running the whole time. The best part is I never felt like I was starving, that I was eating tasteless food, or that I couldn't do the workouts. The support you gave during these past weeks helped so much! I am so excited about my results, ready to take to the next level.

Danielle's 30 day EM Extreme weight-loss program BEFORE/AFTER!

  
Danielle was a DREAM to train!!! She made the program seem easy.... and believe me, IT IS NOT!!! every week she would check-in and say, "everything went great Erin!!!!  Did all the workouts and ate perfectly!"  and her dedication Paid off!!!! (as you can see)... Side note, Danielle has since let me know she is down another 3 lb's, so I took the LIBERTY of changing her stats to reflect that!!!! WOW!  She has made permanent changes to her life and they will continue to pay off!!!! GREAT JOB Danielle!!!

I love that we can do it ALL from home so it is super family friendly. So here is my story!

First and foremost, I am a wife and mom to two kiddos, Cheyenne is 7 and Colton is 4. My most important job is taking care of them and creating a happy healthy household for all of us.

I am 40 years old 5'4" tall and have always been active, fairly health conscious, but have been able to eat just about anything I want. In the last few years, I have noticed my weight slowly creeping up and hit 148 one day and I was not happy with that!! I had been running, 6 miles 4 or 5x per week but I was not getting the results that I wanted. My body was not changing AT ALL!

After starting the program, I realized how much junk I was eating. Finishing my kids mac and cheese, eating goldfish crackers and cheeze-its on a daily basis. Glass of wine every couple of days. Popcorn. Candy bar at the check out line. Cheese burger at McDonalds during an extended trip to town. Lots of cheese, salami, and wine tasting at work. It was endless and it was almost invisible and did not exist in my mind until I stopped. So many temptations...the first week was hard but it got easier every day. I started noticing results within a week! My muscles tone was starting to show and the fat was melting away!

Loved the food prep; I always have meals to grab and go. NEVER be caught without a meal is a great thing to live by.....leaves no room for mistakes!

I am super competitive and I love to race off-road motorcycles. All winter I train for an event in April so I am super excited to use these tools to prepare my body and kick some butt next year. In the mean-time, I plan to keep up the food and exercises that you have given us and keep strengthening and leaning out my body. I feel empowered that I can do this for my body and so quick! Super awesome and that power is priceless:)

Why I've cleaned out my entire cupboard full of beauty products and replaced them with 1 jar of coconut oil!


I Love using coconut oil as a beauty product sooo much!  I even use it on Kellens curls every morning! (just a dab will do your his hair gets greasy!)





Have you all tried cooking with coconut oil yet?????  Well, Not only is it great to cook with but there are KILLER beauty benefits that come in that jar as well! 

It’s loaded with Vitamin E and fatty acids (such as lauric acid, myristic acid, capric acid and more) which are anti-fungal, anti-oxidizing and anti-bacterial, just the sort of stuff that our body happily responds to!

Dry Skin?
You can apply it directly like a lotion, (It's all I have been using lately and my skin has never looked better!). Its found it to be effective in increasing hydration and reducing water loss in seriously dry skin, which is great for me because my skin is VERY dry, and made even worse by how much I sweat and workout!!!! After using Coconut oil I will never go back to regular lotions!!!!!

Shaving
Coat your legs with a light layer and shave away! It smells great and will really moisturize your legs.

Face Wash
Coconut oil helps to reduce acne and blemishes. Wash your face before going to bed, lightly apply coconut oil with your finger and allow it to absorb into your skin. Another way to use coconut oil on your face is by massaging it. Take a few drops and lightly massage until its absorbed. Let it sit for 10-15 minutes and then rinse it off using a face wash. You may experience a few breakouts initially, this will happen until your skin is detoxified.

Makeup Remover
Apply a small amount to a cotton ball and and gently swipe it across your eyes. Yes it even removes waterproof mascara! It does a great job of breaking down heavy makeup. Wash face once done.

Dry Damaged Hair
If your locks are looking more like straw then silk, massage the coconut oil into damp hair and put your hair into a shower cap and wrap a warm towel around it. Leave for twenty minutes then shampoo as normal. This will help strengthen and shine!  Or for a quick Deep conditioning, I've been putting it on my hair right when I get in the shower and letting it soak in while I wash and shave, then I was it out of my hair at the end!!!!

Dandruff
Massage the coconut oil on your scalp - Leave it overnight - Wash it in the morning. Regular use will help clear dandruff. It promotes hair growth providing a beautiful shine.

Reduce Frizz and Shine
Add a little to your ends for frizz control and to add shine. If you have dark hair a small dab will do the trick - any more and your hair might appear greasy.  My baby Kellen has long hair and I put I dab on the ends every morning, It makes it easy to comb through and makes his little curls look look perfect!

Try it!

(Note: Coconut oil takes on a solid form when it's cold. You can use a spoon to get the oil out of the jar if your fingers aren't doing the job. Remember, though, that this stuff liquefies quickly in your hands.)

Also, wherever you put it on your skin, after wiping away excess oil, you should have a little bit of a leftover sheen. That's fine, as the remaining coconut oil will absorb quickly.

Additional tips:
In the mornings, I add my favorite daytime moisturizer on top of the coconut oil, and apply my makeup; I haven’t once had an issue with breakouts or my makeup running.

At night, I sometimes add another dab of coconut oil after washing my face to give it a little added moisture.

I also add a little baking soda to my coconut oil 3-4 times a week to use as a gentle facial scrub.

And let's not forget, this stuff makes an amazing body moisturizer, too—especially straight out of the shower.

You can also add your favorite essential oil to it when it is in liquid form and have different scents.  or just us it as-is... It smells AMAZING naturally!!!

When buying - look for extra virgin, that has not been hydrogenated, bleached, refined or deodorized - this will work best!

2 Healthy ways to Mojito!


PINEAPPLE MOJITO GREEN SMOOTHIE

INGREDIENTS
Makes 1 shake

1/2 cup kale or spinach
1 cup coconut water or coconut milk
1/2 cup pineapple
¼ cup fresh mint leaves
Juice of 1 lime
lime zest
stevia or honey to taste
1/2 an avocado (optional, but it makes it really creamy and delicious!)


DIRECTIONS
Blend until smooth. Enjoy!

*Use frozen fruit to make smoothie cold.


Mojito Protein Shake

Makes 1 serving

INGREDIENTS

- 1 scoop vanilla whey protein powder
- 1/3cup unsweetened almond milk or coconut milk
- 1/2 tbsp honey or stevia
- 10–12 fresh mint leaves
- 1 tsp lime zest
- Juice of 1/2 fresh lime
- 1 cup ice cubes

METHOD

Blend all ingredients until smooth.
Serve.

Pretty Princess Purple Slaw!


My ENTIRE family loved this dish!!! My husband and my sons were all "Pretty Pretty Princess's" at dinner tonight! xo


Yield: 4

Ingredients
For the Slaw:
½ head of a small purple cabbage, sliced into thin ribbons
1 ½ yellow bell peppers, thinly sliced
½ green pepper, thinly sliced
1 pear or fuji or gala apple*, grated with the peel on
~ ¼ cup Vidalia onion**, sliced paper thin
1 sliced cucumber
Avocado (½ per serving)
Blueberries
blackberries
feta cheese (optional)

For the Dressing***:½ cup champagne vinegar (or any white vinegar you like)
¼ cup olive oil
2 teaspoons Dijon mustard
2 tablespoons honey, or stevia (more to taste)
2 teaspoons garlic, chopped
salt
pepper


Instructions
Add all the dressing ingredients in a bottle, cover, and shake vigorously until mixed; taste and adjust.
Throw all the slaw ingredients in an extra large mixing bowl, toss to mix everything up. Pour some of the salad dressing over top and toss to coat evenly. Repeat until the slaw is glistening but there is no extra in the bottom of the bowl.
Serve.

Notes:


*If you are not eating your salad right away, then squeeze a little lemon over the grated apple right after you grate it and before you add it to the salad. Same goes for the avocado.

**If Vidalia onions are not available in your State/country {sadness}, you can use any other mild onion, but, just know, it will change the flavor profile slightly. It might be best just to leave them out.

***I don’t actually measure my dressing on a regular basis. I eyeball it. I make sure I have a ratio of 2:1 vinegar to oil, I add about a little bit of garlic, a little bit of Dijon mustard, a bit of honey, salt and pepper, and then I taste and adjust.

Another note on my light salad dressings. These will not stay emulsified because there is waaaay too much vinegar to oil and not nearly enough mustard or garlic to compensate. They will stay emulsified long enough to dress a salad and serve it, but you have to shake it vigorously. No little back and forth motion is going to cut it.

Deidra's Before and After WOWYYYYYY!




Deidra trained with me for 12 weeks and WOW did this girl KICK butt!!!  We're sisters-in-laws (which she mentioned below) so I had some of the same reservations she did... FIRST... I LOVE DEiDRA!!! I have always thought she was crazy beautiful and I didn't want her to every feel like a was... well... A BIG FAT MEANY JERK!!! Because sometimes, as a trainer, i have to tell it like it is!!!!  LUCKILY, Deidra worked your "you know what off" and I hardly had to be a meany pants!  PLUS... along with getting healthy, she WON 1st runner up in her Mrs. Washington Pageant and, get this.... IT WAS HER 1ST TIME COMPETING IN THE PAGENT!!!!!! UNHEARD OF!!!!

Erin was the perfect fit to train me and get me motivated to reach my goals! I know she and I were both a little hesitant to have her be my trainer, she is a wonderful sister-in-law, but sometimes family shouldn’t mix business! However, I promised I would not only listen to her, but that I would truly implement the plans she was giving me. Erin was my biggest fan, but also would smack some sense into me when I needed it. Whether I needed to get my butt kicked for missing workouts or cheating too much on my meals, to encouraging me when I was being too hard on myself, Erin was there every step of the way. Erin has helped me not only sculpt my body on the outside, but also change the way I see myself from the inside. I have learned to embrace the parts that I see as flawed, and to truly be thankful for the awesome strength and health that God has given me. I would encourage anyone looking for a personal trainer, healthy meal ideas, or just needing a little butt-kicking every now and then to use EM Health and Fitness.

Cucumber, Watermelon & Feta Salad!




This Salad is TO DIE FOR!!!! It's so refreshing in the summer and so easy! Great to take to a BBQ or just eat at home!




INGREDIENTS
2 cucumbers, spiralized
3 cups of cubed watermelon
1 cup of pea shoots
4 oz. of crumbled feta cheese
15 sprigs of mint, minced
¼ cup of olive oil
⅛ cup ginger white balsamic vinegar
Juice of 1 lime
Salt & Pepper to taste


INSTRUCTIONS
In a large bowl add your sprialized cucumber (If you don't have one you can use a vegetable peeler to create cucumber shavings) watermelon, pea shoots, feta cheese & mint. Mix together well.
In a small bowl whisk together olive oil, vinegar, lime juice, salt & pepper until well blended.
Add the dressing to salad mixture and combine together.

TIPS FROM ERIN:  If you don't have white balsamic vinegar, you can use the dark, it will just turn all your ingredients a brownish color... still delicious, just not as pretty! :)

*  You don't have to have a spirilizer to make this salad, but I recommend it.  If you do not have one, make sure you slice your cucumber very THIN, The thinner, the better!!!!

* FUN ADDITIVES (If you like that sort of thing!) thinly sliced red onion, pitted kalamata olives

Endless energy in 1 spoon!


I LOVVVEEE ENERGY!!!! I may be obsessed with it!!! I exercise and eat right, almost solely to have more of it!!!

Besides exercising daily and eating plenty of healthy fruits & veggies... I've added a SPOONFULL OF AWESOME to my daily routine as well!!!

Here it is... My SPOONFUL OF AWESOME ENERGY!!!!

My secret all natural energy ingredients include: raw hemp hearts, flaxseed, & chia seeds, Bee Pollen & extra virgin coconut oil. Obviously I’m very specific about this concoction. Here’s why each component matters:

BEE POLLEN: is known to increase energy & help with allergies ( especially if it’s local ). “bee pollen is a natural way to improve metabolism and help control and take weight off.” It is said that bee pollen improves metabolism by correcting a chemical imbalance and by “supplying the missing factors other foods cannot supply.” Bee pollen supposedly speeds the process of converting sugar into energy providing oxygen that fat can use to speed their conversion into energy. 130mg of bee pollen helps digest 3 pounds of food.

Lecithin is another component of bee pollen that supposedly speeds the rate at which calories are burned. It also “aids in the digestive process and assimilation of nutrients. Bee pollen also has diuretic qualities and is said to reduce cravings and hunger. For weight reduction, take pollen 30 minutes before meals with a glass of water.“

RAW HEMP HEARTS: protein! FIBER! Plus they regulate the metabolism & make your skin glow, hair grow, & nails become stronger.

FLAXSEED: keeps the digestion regular, if ya know what I mean ( winky-wink )

CHIA SEEDS: Omega 3, calcium, fiber. Plus they swell making you feel full.

EXTRA VIRGIN COCONUT OIL: because coconut oil is FREAKING amazing. Trust me. Healthy fats!! It also helps our bodies gain a resistance to both viruses & bacterias that cause illness. The oil also helps fight off gross yeast, sickie fungus, & aids in managing blood sugar control. It can boost thyroid function to increase the metabolism & energy. This sexy oil also helps with digestion & reduces cholesterol.



Also note that this little spoonful of energy promotes weight loss. Let’s just say it gets everything flowing.

I just keep equal parts of all the seeds in a container on my kitchen counter & either, add a spoonful of them to whatever I'm eating, AKA salads, oatmeal, smoothies, etc. OR I take a spoonful plain about 30 minutes before my first meal of the day. When I eat a spoonful plain I scoop up about 1/2 a spoonful of coconut oil, and fill the rest with the seeds.

You can do this up to two times a day... or 30 minutes before 2 of your meals. (or add the seed mixture to 2 of your meals)

If you don’t like the taste…plug your nose. Beauty is pain. I personally love the taste though.

+ Disclaimer: please note that a lot of people are highly allergic to bee pollen ( & don’t know it ). If you’ve never ingested it, please try one kernel under your tongue to see if you’re allergic before eating any kind of bee pollen.

ZUCCHINI PASTA WITH AVOCADO CREAM SAUCE

Serves: 4

INGREDIENTS
4 small (or 2 large) zucchini, ends trimmed and spiralized with a julienne peeler or spiralizer
1 avocado
½ a cucumber, chopped
juice of ½ a lemon
1 clove garlic
2 tablespoons almond, coconut, or cashew milk
about 8 leaves of basil
salt & pepper
halved cherry tomatoes & basil leaves for garnish

INSTRUCTIONSPlace zucchini spirals in a large bowl.
In a food processor, combine the remaining ingredients and process until smooth.
Toss the zucchini with the avocado sauce until fully coated.
Garnish with cherry tomatoes and basil leaves, season with more salt & pepper to taste.

-I put this cream sauce on lots of different things!!! Any roasted or steamed veggies. Spaghetti squash! Smother chicken with it or shrimp, or even quinoa!

-Also, If you want to take the time to "spiral" you're zucchini or yellow squash, that's great.... However, don't be intimidated by that... You can just slice it up as well!!!

-Add grilled chicken or shrimp to this dish for some added protein

HUGE TIP TO CUT CALORIES!!!!!  
ONLY USE 1/2 AN AVOCADO AND 1/2 A CUP OF LOW SODIUM CANNED PEAS!  Still gt the healthy fat and less calories... you won't even taste the peas!!!!
