ZUCCHINI PASTA WITH AVOCADO CREAM SAUCE

Serves: 4

INGREDIENTS
4 small (or 2 large) zucchini, ends trimmed and spiralized with a julienne peeler or spiralizer
1 avocado
½ a cucumber, chopped
juice of ½ a lemon
1 clove garlic
2 tablespoons almond, coconut, or cashew milk
about 8 leaves of basil
salt & pepper
halved cherry tomatoes & basil leaves for garnish

INSTRUCTIONSPlace zucchini spirals in a large bowl.
In a food processor, combine the remaining ingredients and process until smooth.
Toss the zucchini with the avocado sauce until fully coated.
Garnish with cherry tomatoes and basil leaves, season with more salt & pepper to taste.

-I put this cream sauce on lots of different things!!! Any roasted or steamed veggies. Spaghetti squash! Smother chicken with it or shrimp, or even quinoa!

-Also, If you want to take the time to "spiral" you're zucchini or yellow squash, that's great.... However, don't be intimidated by that... You can just slice it up as well!!!

-Add grilled chicken or shrimp to this dish for some added protein

HUGE TIP TO CUT CALORIES!!!!!  
ONLY USE 1/2 AN AVOCADO AND 1/2 A CUP OF LOW SODIUM CANNED PEAS!  Still gt the healthy fat and less calories... you won't even taste the peas!!!!
