Summer Corn & Tomato Salad
Such a simple side dish, or an entire meal! Tomato's and corn are on in Washington right now and I used both from my garden!!! SO DELISH!
Ingredients (2-3 servings)
- 2 ears of sweet corn, removed from cob with a knife (you can cook the corn or not. I prefer it cooked)
- 2 cups cherry tomatoes, halved
- 2 green onions, thinly sliced
- 2 tablespoons extra virgin olive oil, divided
- 1 tablespoon fresh basil, minced
- salt & pepper
- 1 tablespoon balsamic vinegar
- Parmesan shavings for garnish
Instructions
- Combine everything in a medium bowl.
- Garnish with shavings of fresh Parmesan cheese and more basil if desired.
**** 1 cup is a meal
