Sometimes there is such a simple way to make our lives easier that when we here it, it's like.... DUUUUUUHHHHHH!...
(This is one of those things)
(usually I use a square pan, but mine was dirty today! lol!)
Whenever I'm in a hurry to make my quick healthy meals, I make square meatballs by pressing the meat mixture into a pan and cutting them into squares, instead of spending all that time rolling them into round balls!
You can do this with any of my healthy meatball recipes, but I've given you one of my favorite recipes below!!!!
Eat your 3 meatballs for one of your mini meals during the day, or have them for dinner with a veggie!
DONE AND DONE!
Square jalapeno lime Turkey Meatballs!
Ingredients
2
lb ground chicken or turkey (you can use lean ground beef if you like, but it will have a few more calories)
1
jalapeño, minced
1/4
cup minced red onion
2
tbsp chopped fresh cilantro
2
tbsp key lime juice
1
tsp garlic powder
1
tsp paprika
Dash
of salt and pepper
Cooking
Steps
Spray square baking pan with cooking spray or coat with olive oil. Heat oven to 350 degrees.
Combine
all ingredients in a large bowl. Using your hands, mix until thoroughly
combined.
Press meat mixture into pan
cover with tinfoil and bake for 20 to 30 minutes
Makes 16 meatballs, so just slice your pan of meat into 16 little squares!!!
*A serving size is 3 meatballs (3 meatballs equals 1 meal!)
Aprox 250 to 300 calories per serving.
If you're on an EM meal plan, this meal is AWESOME to replace ANY one of your 6 meals! :) In fact, you could eat this for multiple meals a day if you like!!!! :)
