Cinnamon-Garlic Meatballs (with Tomato Sauce and Feta)
Ingredients
1 pound ground turkey or
chicken
1/4 cup oatmeal or quinoa
flakes
1/4 cup minced yellow or white
onion
1 large egg or 2 egg whites
1 finely chopped garlic clove
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1/4 teaspoon freshly ground
black pepper
1 cup good-quality jarred
tomato sauce and 2 ounces feta cheese, for serving
(I also added a bunch of
spinach and mushrooms, because… well, WHY NOT?)
Directions
Preheat
oven to 400 degree F. Combine all ingredients, except the tomato sauce and
cheese, in a large bowl and mix until just combined. Moisten hands, and gently
form mixture into 1-inch meatballs (you should have about 25) and place on a
baking sheet. (Meatballs can be made through this step up to 24 hours ahead and
stored covered in the refrigerator; let come to room temperature 10 minutes
before baking.)
Bake
until meatballs are warmed through and almost cooked, about 15 minutes.
(Meatballs can be made through this step up to 1 1/2 hours ahead and kept in a
warm oven until ready to serve.)
Remove meatballs from oven, toss with tomato
sauce, and sprinkle with feta cheese. Return to oven and bake until meatballs
are completely cooked, tomato sauce is warmed through, and cheese is melted,
about 5 more minutes. Skewer meatballs with toothpicks and serve.
I didn’t have tomato sauce on hand so I made my
own simple version. Just diced
tomatoes with some garlic, balsamic vinegar, and stevia for a little sweetness,
IT WAS DELISH!
**** For those of you on an em meal plan. You can have this for ANY meal you want. 3 meatballs equal 1 serving, I eat mine over steamed broccoli or (my favorite) spaghetti squash! Have them over any veggie you want and smother the top of the dish with the Delicious tomato sauce the meatballs are cooked in! THIS IS ONE OF MY FAMILIES FAVORITE DISHES!!!!
