Homemade Apple Cinnamon LARABAR



1 cup dried apples
1 cup dates, pitted (use Medjools over Deglets – they bind better)
2 cups cashews
1 lemon, grated zest of
1/2 vanilla bean, seeds of
1 TBS Cinnamon

Chop the dried apples in a food processor. 

 Place the apples in a large mixing bowl. Chop the dates in the food processor until gooey and scrape those into the mixing bowl with the apples. Chop the cashews in the food processor until they resemble coarse crumbs. Empty the cashews into the mixing bowl. Add the grated lemon zest and the vanilla bean seeds to the fruits and nuts. 

Mix thoroughly by hand (knead it if you have to) and press into an 8 or 9-inch baking pan to about 1/2-inch thickness. Refrigerate for 30 minutes then turn the square out onto a cutting board. Slice to desired size and shape. Makes 10 1.7 x 4.25-inch bars.

1/3 C rolled oats (dry)
1 C yogart (I like plain best)
fruit on top - whatever is in season: blueberries, strawberries, sliced apples, banana, pear, peach or use dried fruit.
*for omega 3's, sprinkle flax seed on top

Ziploc Baggie Omelet


Get a bunch of these ready this weekend, by simply putting all the raw ingredients into a bunch of baggies and storing them in your fridge.  Then when you wake up during the week, you just start boiling some water, Drop a baggie in, and let it boil while you're getting ready! When you're done fixing your hair, It's time to eat!!!! yay!

(Also works great for when all your family is together. The best part is that no one has to wait for their special omelet !!!) 


What to do:


Place 4 eggs whites in a plastic ziploc bag. 
Add whatever veggies you like, onion, peppers, mushrooms, salsa, etc.


Zip up the bag and shake. (Make sure to get the air out of the bag when you zip it up.)


Place the bag, or bags, into rolling, boiling water for exactly 13 minutes.


Open the bag and the omelet will roll out easily.
