Peanut Butter Truffles

Peanut butter Truffles




This is an old stand-by of mine.  If you love peanut butter, you'll LOVE these!  Everyone I make them for raves... even the guys, (and we all know that's the true test!)


makes 18-20 bites)

1 cup oatmeal
1/2 cup peanut butter (or other nut butter) I use this stuff called PB2, You can order it on Amazon, it tastes great and has WAYYYYY fewer calories!
1/3 cup Stevia
1/2 cup chopped dates
1/2 cup ground flaxseed
1/2 dried fruit of your choice. (try and find it sugar free)
1 tsp vanilla

Mix everything above in a medium bowl until thoroughly incorporated.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls and enjoy!  Store in an airtight container and keep refrigerated for up to 1 week.


1 BITE:
100 calories, 13 carbs, 6 grams of fat, and 2 grams of protein.

I eat 2 or 3 bites for a meal
