Pineapple Upside-Down MINI Cake
Ingredients:
2
cups almond flour, (grind up almonds in your blender)
4
egg whites and 1 full egg
1/4
cup coconut oil, melted or olive oil
1/2
cup stevia
1
tsp vanilla extract
1/2
tsp cinnamon
1/2
tsp cloves
1/2
tsp salt
about
4 large round slices off of a whole fresh pineapple, plus 1/2 cup chopped pineapple
is optional
Preheat
the oven to 350
Mix
the eggs, stevia, coconut oil or olive oil, and vanilla. Add 1/2 cup chopped pineapple. Add the
almond flour, salt, and cinnamon. Mix well.
Line
the bottom of a muffin tin with muffin papers and grease them with “spray olive
oil”
Place
a pineapple slice in the bottom of each muffin dish.
Pour
the batter over the pineapple slices and bake for 25-30 minutes. Or until
a toothpick comes out clean when inserted in the top.
Let
cool on a rack, then loosen the edges, flip over, and enjoy.
