Corn and Black Bean Chicken Tacos




Ingredients

8Hard taco shells 1
1 lbBoneless, skinless chicken breasts - cut into cubes
1/2 pkgTaco seasoning mix
1Large onion, sliced
1 tspGarlic powder 2
1 canCorn, drained
1 canBlack beans, drained
3/4 cuplow calorie, sugar free salsa
1Chopped tomato
4 tbsLight ranch or fat free sour cream

Shredded lettuce

Note:  If you want an even LOWER CALORIE VERSION SWAP OUT YOUR TACO SHELL FOR A LETTUCE CUP.


Instructions

Season chicken with salt and pepper and spray large non-stick skillet with non-stick cooking spray.

Cook chicken over high heat stirring until browned on all sides (about 6 minutes).

Reduce heat to medium and add the garlic, taco seasoning and onion to chicken.  Add 1/2 cup water and mix well making sure to really scrap the bottom of the pan (that’s where a lot of the flavor is!).
Cook chicken and onions for about another 4 minutes until onions are tender and sauce is thickening.
Stir in salsa, corn and beans (at this point sauce should be thickened, if not, cook for a few extra minutes).
Spoon about 1/4 cup mixture into each shell, and garnish with tomatoes, lettuce, and any other veggies you like, (the more veggies the better) and 1 Tbs light ranch (or light sour cream) if desired.
Recipe makes 4 servings, 2 taco's each.  nutrition and calorie count varies depending on the Taco shells you use, or if you use lettuce.
