Do not use the super Bowl this weekend as an excuse to TOTALLY BLOW your healthy eating plan. THERE IS NO NEED, AND NO EXCUSE! There are WAYYYY to many DELICIOUS HEALTHY recipes to serve at your next get together.
HERE ARE A FEW THAT ARE SOOOOOO GOOD, NO ONE WILL SUSPECT THEY ARE HEALTHY!!!!!
Super Bowl Sunday Cauliflower Bagel Bites
(If you've tried to make Cauliflower pizza bites in the past and they have come out slightly, "gummy" try this method. They won't be gummy!
Ingredients:
2 Cups Grated Cauliflower (washed, dried and grated using a food processor or cheese grater by hand until rice-like or thinner – Note – Approximately one head of cauliflower)
1/4 Cup Egg Whites
1 Cup fat free Cottage Cheese (drained) To drain your cottage cheese, spoon it into a cloth over your sink and squeeze all the excess water out through the cloth. Works best if you use a thin cloth, such as a cloth napkin.
1 Tsp Oregano
2 Tsp Parsley
1/4 Tsp Garlic Powder
1-2 Tbsp Frank’s Hot Sauce (Optional)
Directions:
Pre-heat your oven to 450 F.
Using a a flat cookie sheet, cover the sheet with nonstick parchment paper and spray paper with healthy cooking oil spray.
In a hot frying pan, stir fry the “cauliflower rice” until the cauliflower is slightly translucent (about 6-8 minutes). Place in a bowl and let cool.
Place all other ingredients in the food processor and blend until smooth.
In a bowl combine both the “cauliflower rice” and blended ingredients. Mix completely.
Evenly spoon mixture onto parchment paper using a spoon or cookie scoop. Press pizza dough down evenly and firmly with back of spoon
Place in your oven and bake for 25-30 minutes. or until the tops start turning golden brown
Remove the bagel bites from the oven and let set until cool (This is very important – let these Bagel bites set on their pan for 5 – 10 minutes before removing – If you take them off while they are too hot they will break).
Once cool remove from cookie sheet
Use organic, no sugar added natural pizza sauce on top, along with 1 slice of turkey pepperoni, TURKEY BACON, And veggies of your choice!!!!
