Super Bowl Sunday Cauliflower Bagel Bites


Do not use the super Bowl this weekend as an excuse to TOTALLY BLOW your healthy eating plan.  THERE IS NO NEED, AND NO EXCUSE!  There are WAYYYY to many DELICIOUS HEALTHY recipes to serve at your next get together.  

HERE ARE A FEW THAT ARE SOOOOOO GOOD, NO ONE WILL SUSPECT THEY ARE HEALTHY!!!!!

Super Bowl Sunday Cauliflower Bagel Bites

(If you've tried to make Cauliflower pizza bites in the past and they have come out slightly, "gummy"  try this method.  They won't be gummy!

Ingredients:
2 Cups Grated Cauliflower (washed, dried and grated using a food processor or cheese grater by hand until rice-like or thinner – Note – Approximately one head of cauliflower)
1/4 Cup Egg Whites
1 Cup fat free Cottage Cheese (drained) To drain your cottage cheese, spoon it into a cloth over your sink and squeeze all the excess water out through the cloth.  Works best if you use a thin cloth, such as a cloth napkin.
1 Tsp Oregano
2 Tsp Parsley
1/4 Tsp Garlic Powder
1-2 Tbsp Frank’s Hot Sauce (Optional)

Directions:
Pre-heat your oven to 450 F.
Using a a flat cookie sheet, cover the sheet with nonstick parchment paper and spray paper with healthy cooking oil spray.
In a hot frying pan, stir fry the “cauliflower rice” until the cauliflower is slightly translucent (about 6-8 minutes). Place in a bowl and let cool.
Place all other ingredients in the food processor and blend until smooth.
In a bowl combine both the “cauliflower rice” and blended ingredients. Mix completely.
Evenly spoon mixture onto parchment paper using a spoon or cookie scoop. Press pizza dough down evenly and firmly with back of spoon
Place in your oven and bake for 25-30 minutes. or until the tops start turning golden brown
Remove the bagel bites from the oven and let set until cool (This is very important – let these Bagel bites set on their pan for 5 – 10 minutes before removing – If you take them off while they are too hot they will break).
Once cool remove from cookie sheet
Use organic,  no sugar added natural pizza sauce on top, along with 1 slice of turkey pepperoni, TURKEY BACON, And veggies of your choice!!!!

EVERYONE AT YOUR SUPER BOWL PARTY WILL GOBBLE THESE UP, THEY ARE AMAZING!!!!

turkey bacon wrapped asparagus

This is just tooo good, I have to share!

If you're on an EM meal plan, you can replace this with ANY meal you want!!!  It's a GREAT portable snack and an AMAZING way to get your kids and hubby to eat veggies!!!!!  I can't make these fast enough!


turkey bacon wrapped asparagus

1. Set your oven on broil

2. Cut the ends off as many asparagus spears as you want

3. Group 3 spears together

4. Wrap a peace of turkey bacon around the 3 spears

5. Make as many groups of 3 as you want

6. Lay the bundles on a greased baking sheet

7. I sprinkled the tops of the asparagus with a little garlic

8. Place under broiler for aprox 5 min, or until bacon is crispy

Remove and enjoy!

*  3 turkey bacon wrapped bundles equal 1 serving!

Pumpkin Spice & Mocha Mint Latte

For some reason I've had TONS of people asking me about healthy coffee options as of late. So, here ya go!

Many people don't realize that there daily coffee from the coffee shop has turned into the calorie equivalent of an ice cream shake. You wouldn't drink 3, 4, or even 6 ice cream shakes and expect to lose weight would you? But somehow we label our "coffee shake" as ok because it's coffee. Even the "so-called" healthy options from the coffee shop have soooo many crazy additives that force your body to hang onto extra body fat, they are not a good option either.

When it comes to coffee, MAKE YOUR OWN. Here are 2 of my favorite options




Pumpkin Spice Latte
Ingredients
1-2 tablespoons of "no sugar added" canned pumpkin
2 tablespoons of vanilla
1/4 teaspoon cinnamon
1 cup vanilla almond milk
1/2 cup of your favorite coffee (or more if you have a big mug)
InstructionsHeat up the pumpkin and milk, mixing with a fork, until it is steamy. I did this in a pot on the stove.. you could also pop it in the microwave for 2-2.5 minutes.
Mix in the vanilla and cinnamon
Pour mixture in a blender and blend until frothy (about 20 sec) I used a hand blender in the pot that I warmed the milk in (I don't like to dirty too many dishes)

Add mixture to you coffee and enjoy in your favorite mug and top with a little nutmeg, cinnamon, or pumpkin pie spice!


Mocha Mint Latte
Ingredients
1/2 cup of almond
1 tbsp of cocoa powder, raw cocoa powder, not chocolate mix
double shot of espresso
few drops of natural mint extract
Instructions
Pour the espresso into mug along with the steamed milk. Put the cocoa powder in a small container and add a tablespoon of water. Mix the water and cocoa to create a paste that has no clumps then add to mug. Add a few drops of the mint...personally I do one drop at a time as I find mint very overpowering. Adjust to your liking and enjoy!
